I had asked a question about back stabbing weapons and somone mentioned Stabbing was a sub set of piercing. W/o giving anything away, if I have two stabbing weapons will my piercing skill increase?

But eventually, yes it will increase. As while training with two piercing weapons, your skill will advance in piercing, much faster than if you were using a pierce/stab or pierce chop/bludgeon combo.
Stabbing weapons are exactly the same as piercing weapons in every way (not including the normal defferences between weapons, of course), except that you can skin and backstab with them.
